Italian Turkey Sausage SoupNov 01, 2021
1 Tbls olive oil
1 pkg Italian turkey sausage
½ large white onion, chopped
1 cup chopped or shredded carrot
1-2 ribs celery, chopped
2 cloves garlic, minced
32 oz chicken broth
14 oz fire roasted diced tomatoes
14 oz cannellini beans, drained & rinsed
1 tsp Italian seasoning
1 tsp red wine vinegar
1 tsp salt
½ tsp pepper
3 cups baby spinach
Parmesan cheese for topping (optional)
- Put oil in pot and brown turkey sausage over medium heat. Break up into small pieces.
- Remove sausage and set aside.
- Saute onion, celery and carrots in remaining juice until starting to soften. Add garlic and cook about 2 more minutes.
- Return sausage to pot and add remaining ingredients except spinach. Bring to a simmer and then turn down heat. Continue to cook for 15 minutes and stir in spinach. Remove from heat and ladle into bowls. Top with Parmesan if desired.
