Italian Turkey Sausage Soup

1 Tbls olive oil
1 pkg Italian turkey sausage
½ large white onion, chopped
1 cup chopped or shredded carrot
1-2 ribs celery, chopped
2 cloves garlic, minced
32 oz chicken broth
14 oz fire roasted diced tomatoes
14 oz cannellini beans, drained & rinsed
1 tsp Italian seasoning
1 tsp red wine vinegar
1 tsp salt
½ tsp pepper
3 cups baby spinach
Parmesan cheese for topping (optional) 


  1. Put oil in pot and brown turkey sausage over medium heat. Break up into small pieces.
  2. Remove sausage and set aside.
  3. Saute onion, celery and carrots in remaining juice until starting to soften. Add garlic and cook about 2 more minutes.
  4. Return sausage to pot and add remaining ingredients except spinach. Bring to a simmer and then turn down heat. Continue to cook for 15 minutes and stir in spinach. Remove from heat and ladle into bowls. Top with Parmesan if desired.
